Cooking Instructions:
- Combine all ingredients into a bowl and whisk together; divide into two containers
- Add Ensemble Bites into one of the containers and mix until all pieces are evenly coated
- Add onions, peppers and squash into the other container and mix until evenly coated
- Marinade for at least 2 hours
- Layer 12 long skewers with alternating Sautés, red bell pepper squares, red onion wedges, Bites, green bell pepper squares and yellow squash
- Heat up a grill and brush grates with oil
- Grill skewers until vegetables are tender; serve with yellow rice or grilled flatbread

Mediterranean Marinade:
- ½ cup olive oil
- 1 lemon, juiced
- 1 lemon, zested
- 1 paprika
- ½ tsp ground cumin
- 2 tsp oregano, chopped
- 1 tsp thyme, chopped
- 4 garlic cloves, minced
- 1 Tbsp salt
Skewers:
- 3 lbs Ensemble Sautés
- 2 red onions, cut into thick wedges
- 3 red bell peppers, cut into squares
- 3 green bell peppers, cut into squares
- 3 yellow squash, cut into thick rounds
