Mediterranean Grilled Skewers with Sautés

Delicious Ensemble Sautés marinated with squash, peppers and onions grilled on skewers. Perfect with rice or flatbread.

Cooking Instructions:

  1. Combine all ingredients into a bowl and whisk together; divide into two containers
  2. Add Ensemble Bites into one of the containers and mix until all pieces are evenly coated
  3. Add onions, peppers and squash into the other container and mix until evenly coated
  4. Marinade for at least 2 hours
  5. Layer 12 long skewers with alternating Sautés, red bell pepper squares, red onion wedges, Bites, green bell pepper squares and yellow squash
  6. Heat up a grill and brush grates with oil
  7. Grill skewers until vegetables are tender; serve with yellow rice or grilled flatbread

Ingredients:

Mediterranean Marinade:

  • ½  cup olive oil
  • 1   lemon, juiced
  • 1   lemon, zested
  • 1   paprika
  • ½  tsp ground cumin
  • 2   tsp oregano, chopped
  • 1   tsp thyme, chopped
  • 4   garlic cloves, minced
  • 1   Tbsp salt

Skewers:

  • 3  lbs Ensemble Sautés
  • 2  red onions, cut into thick wedges
  • 3  red bell peppers, cut into squares
  • 3  green bell peppers, cut into squares
  • 3  yellow squash, cut into thick rounds
