Cooking Instructions:
- Heat a large skillet over medium heat; add 1 Tbsp olive oil and sauté Ensemble Strips until hot and they take on a little color
- Pour in vegan buffalo sauce and stir until the Strips are well-coated; take off heat and set aside somewhere warm
- Toast tortilla wraps until warm and pliable; lay out 1 cup of baby kale mix into the center of each wrap
- Layer buffalo Strips, shredded carrots, sliced red pepper, julienne onions and sliced avocados evenly on top of baby kale mix
- Fold the sides inwards, over the filling (fold 1 to 2 inches inwards on each side)
- Roll the burrito over the filling, tucking the flap firmly inwards as you roll to secure all your fillings
- Serve alongside vegan ranch dressing

- 1 cup vegan buffalo sauce (Sweet Baby Rays Buffalo, Primal Kitchen, Anchor Bar)
- 2 cups carrots, shredded
- 1 ea red bell pepper, julienne
- 2 ea avocados, sliced
- ½ ea red onion, julienne
- 6 cups baby kale spring mix or baby spinach
- 6 ea large tortilla or wrap of choice
- 1 cup vegan ranch dressing
